Pairing: Cape Point Vineyards Reserve Sauvignon Blanc (Noordhoek).

The Harmony: The maritime salinity of the Noordhoek vineyards mirrors the "oceanic" umami of the kelp and sea lettuce.

II. Wild Fynbos Risotto

Carnaroli rice infused with Buchu and Rooibos, topped with crispy salt-baked celeriac.

Pairing: Steenberg ‘The Black Swan’ Sauvignon Blanc (Constantia).

Focusing on the textured whites and elegant reds of the coastal slopes.

I. Wood-Fired Baby Leeks

Toasted macadamia cream, chive oil, and charred lemon zest.

Pairing: Constantia Glen 'Two' (Sauvignon Blanc/Semillon Blend).

The Harmony: The waxy texture of the Semillon in this coastal blend stands up to the richness of the macadamia cream.

II. Forest Mushroom & Truffle "Scallops"

King Oyster discs, pea shoot purée, and a reduction of aged balsamic.
